Not just for summertime, this slaw makes a great side for pulled pork. Or maybe a new side at Thanksgiving.
¾ cup plain full-fat yogurt
2 Tbs Dijon mustard
2 Tbs bourbon barrel aged maple syrup
2 Tbs apple cider vinegar
1 Tbs sesame seeds
1 Tbs lime juice
1 Tbs toasted sesame oil
½ tsp salt
½ tsp black pepper
4-5 cups shredded cabbage
½ cup shredded carrot
1 medium apple shredded
1 inch fresh grated ginger
½ cup dried cranberries
Combine yogurt, mustard, maple syrup, vinegar, lime juice, sesame oil, salt and pepper in a medium bowl.
Stir until smooth. In a larger bowl, toss together cabbage, carrot, apple, ginger and cranberries.
Top with dressing, combine until evenly
distributed.
