If undecided about the grade, many people prefer Dark Color & Robust Flavor for cooking and baking and Amber Color & Rich Flavor as a topping. But either grade works for any purpose. In general, the darker the grade the more "mapley" the flavor. Learn more about maple syrup grades here. If you are really undecided you can always order one of each :-)

When we hear the term "organic" many of us think of food that is produced without harmful pesticides, fertilizers, and other chemicals. Maple syrup is produced from raw, natural forests. The trees were not planted, they were naturally there and they don't require annual planting, fertilizing, pesticide application or harvesting. So in this sense maple syrup is naturally organic. But there are some production practices that may cost more, but are more sustainable for the forest than others. Organic certification ensures that the maple syrup producer is following all the best practices to allow the forest to remain healthy decades and even centuries into the future.
