Processed in small batches with utmost attention to quality and purity.  We strive to boil the sap the same day it is collected and we use stainless steel tanks, fittings, pans, and utensils to produce the purest tasting maple syrup available.

If undecided about the grade, many people prefer Dark Color & Robust Flavor for cooking and baking and Amber Color & Rich Flavor as a topping.   But either grade works for any purpose.  In general, the darker the grade the more "mapley" the flavor.  If you are really undecided you can always order one of each  :-)

Organic Maple Syrup has gone through a rigorous certification process. This ensures that the syrup itself is all natural and contains no harmful ingredients and it also ensures that the process used to produce the syrup is environmentally friendly and sustainable.   Maple Syrup that is not organically certified has not gone through this inspection process.  Hence, organically certified maple syrup provides you an extra quality control step so you can be confident of what you are buying.

When we hear the term "organic" many of us think of food that is produced without harmful pesticides, fertilizers, and other chemicals.  Maple syrup is produced from raw, natural forests.  The trees were not planted, they were naturally there and they don't require annual planting, fertilizing, pesticide application or harvesting.   So in this sense maple syrup is naturally organic. But there are some production practices that may cost more, but are more sustainable for the forest than others.  Organic certification ensures that the maple syrup producer is following all the best practices to allow the forest to remain healthy decades and even centuries into the future.
