Maple Candy should be stored in a cool, dry location out of direct sunlight, with the box lid closed. We recommend not putting the candy in the refrigerator because the low humidity will dry out the candy. Conversely, we recommend not putting our maple candy in a sealed zip-lock bag because some water will evaporate out of the candy and the air inside the bag will become too moist. For long term storage you can freeze maple candy, just make sure it is well sealed to prevent freezer burn.

Smooth maple candy depends on carefully controlling how maple syrup crystallizes. The goal is to create many very small sugar crystals instead of fewer large crystals. Small crystals give maple candy its soft, creamy texture, while large crystals make it feel hard or grainy.
To do this, the hot maple syrup must be cooled to the right temperature before it is stirred. If the syrup is stirred while it is still too warm, the sugar crystals have more time to grow larger, which can create a coarse or grainy texture.
But the syrup cannot cool too much, either. If it gets too cool, it begins to harden before it can be poured into maple candy molds.
Every batch of maple syrup behaves a little differently, so making smooth maple candy is part science and part craft. The key is waiting long enough for the syrup to cool properly, but not so long that it hardens before it can be shaped.
