Lisa's Maple Coated Nuts

Ingredients

2 Cups of Mixed Nuts. Any type of nut is ok, we like almonds, walnuts, pecans, cashews, and pistachios.  You can make mixed batches or a patch of all one type like cashews.   

1/2 Cup Maple Syrup (I like amber but if you want a stronger maple flavor try dark maple syrup).

Directions

Roasted Nuts - Spread 2 cups of mixed nuts on a shallow cookie sheets. Place in oven at 350 deg F and roast for 12-15 minutes.

In a heavy saucepan heat maple syrup to boiling, about 5 minutes.

Reduce heat to low and continue boiling until all the syrup becomes "frothy" (not just the top), about 10 more minutes.

Quickly add the nuts to the syrup.  With heat on low, stir with a fork to coat and continue cooking 2-5 minutes.

Syrup will glaze on the nuts and after a few minutes the syrup will become white in color (like maple candy)

Keep stirring over medium heat until the nuts are covered and you see no wet syrup.

Spread on cookie sheet to cool.

Cleanup is easy.  Immediately rinse spoon and pan with hot water to get ready for the next batch!

Store in mason jars or give as gifts.

Note: 21 Cups of nuts uses 1.5 Quarts of syrup.
