We make our maple sugar by first heating organic maple syrup to 260 degrees. This evaporates all but a couple percent of the water and creates a supersaturated solution. We quickly put this solution in a large bowl and mix it with a Hobart mixer. As the solution cools it gradually transforms to maple sugar crystals. We put the maple sugar on trays to cool, then process the sugar through a sifter to get a uniform crystal size for our granulated maple sugar.

Maple sugar can be used wherever white sugar is called for. Most people use 3/4 cup maple sugar for 1 cup of cane sugar, but if you want a sweeter result you can substitute 1-for-1.

Yes, our maple sugar can be used as maple powder to create maple syrup.

  1. Make 2/3 cup of syrup by mixing 7 tablespoons (3.7 ounces or about 1/2 cup) of water with 1 cup packed Barred Woods granulated maple sugar in a saucepan.
  2. Heat over medium heat and stir gently until the crystals dissolve and the mixture thickens.
  3. This should give maple syrup at about 66 brix. Adjust the amount of water up or down for a thinner or thicker syrup.
